You can just downgrade the Ubuntu kernel; grab a patch, build from source. You don't need to match the kernel version with the one shipped with the distribution. Stability wise as Ubuntu is a horrible development platform with nearly all philosophies of a Linux system go out the window, it's a toss up as to how stable it will still be, as with any modification to an Ubuntu system. Changing a kernel is no different. What it really all boils down to is; does the toolchain support the kernel you're trying to build, as well as the hardware. Just treat it like a Slackware/LFS system, building .deb packages for RTAI and the IPIPE-patched kernel won't save you from all the bugs. It might take awhile to notice them anyways, Ubuntu is magic like that. Good luck!
