you might have a chance if the host side has a ehternet supported by REDD
(http://redd.sourceforge.net) under active development by Sergio Perez
Alcaniz - requires TLSF patch for now as its not yet integrated in RTLinux/GPL
If you run it dedicated for RT-trafic only it should basically work. But it 
depends on what happens between data-aquisition and data presentation on the 
ethernet port - not sure if you will be able to have that under control.

Alternatively (and most likely less expensive) use a VIA-ITX board with a
single 12V supply and a DAQ card on it. If you need details on such solutions
drop me a mail.
