By specifying UUID=SOME_UUID.

If you have several such ext4 partitions, it would be easier, as Joe
Zeff said, tu use /etc/fstab instead of creating 2 systemd units for
each of them.

Use such template (in /etc/fstab):

  UUID=SOME_UUID /mnt/SOME_NAME ext4 defaults,x-systemd.automount 0 0

instantiate SOME_UUID and SOME_NAME for each wanted partition.

I don't know: I do not use "Gnome Files"

Beware, before unpluging such USB sticks, you should manually umount
the ext4 partitions if you mounted them (with /etc/fstab or .mount
units).
