Warum nicht einfach "make -C /etc/mail"? Das ist so per default möglich
bei Fedoras Sendmail und baut alle map files neu. Ein Neustart Sendmails
ist nach Änderung von map files sowieso überflüssig.

Wofür soll das Log ein Beispiel sein? Dass du dir ein offenes Relay
konfiguriert hast?

Was ist denn die Fehlermeldung, die du erhälst? Wenn "Relaying denied",
dann
