Up front, I believe in Linux and any company that is supporting the effort 
to get it in the hands of users is great in my books.  That aside, I can 
tell you from personal experience that Red Hat is the best distro to go 
with to handle any server load (ie mail).  At the ISP I am running I was 
using Mandrake and have been pulling my hair out.  I install RH 7.2 and 
everything "just works".  I think Caldera is pretty much out of the 
picture at the moment.  Mandrake is very cutting edge and as a result you 
may find you spend a lot of time trying to figure out what is wrong.

How many users are you going to serve?

I would go Postfix for mail, Samba if you are serving Windows clients for 
file sharing and of course Apache for web.
