I can't imagine that infrastructure requirements would be particularly difficult for the basic courses, as Redhat runs happily on most PC hardware. You'll almost certainly need to have a RHCE certified trainer to deliver the training--and the training would be considerably more impressive if that person was a skilled Windows 2000 admin as well. You could incorporate the Sun kit into a more advanced class... Seeing a message from Panama has reminded me of the nice cafe in downtown Panama City where I had my first taste of corvina.
