RedHat Compiled apps

Does anyone know if RedHat leaves any evidence behind for the compile time options they use to compile some of the major systems like Samba, Apache, etc?

In particular, what I'm after are the switches used during the ./configure phase. It appears they don't take the developer suggested defaults for file locations, etc in many instances. I'm wondering if there is any way to definitively determine what options are either on or off for any particular subsystem and what directory paths they set for the various directory variables by finding some evidence of how they ran their compiles to produce the RPM's.
