You don't want to change the root email address, you want to modify 
sendmail's alias file so that email for root is forwarded to another 
(monitored) mailbox. I really recommend "Essential System 
Administration" By AEleen Frisch and it is partially available on line 
with google books. This alias topic is addressed on page 526.
