Rearrange/edit start menu in Gnome: looking for definitive how-to

This is the last little tweak.  I am looking for a definitive "how-to"
rearrange/edit the start menu in Gnome.

 

It's a little cluttered.  I'd like to add a few folders.  Condense a few
areas.  Nix/hide a few items.

 

Thoughts?

PS  Please don't say KDE.  It's okay but I prefer Gnome.
