RE: updating to one multiple package versions

What you seem to be asking for is a time-snapshotted repository ala a
blockpoint mindset.

A couple possibliities leap to mind:
*	run createrepo for your updates repo only occasionally so you
would get the latest updates 'that you indexed' not necessarily the
latest rpm set 'that you have mirrored'.
*	run yum through a source code control system.  If you had the
(commercial) clearcase system, you could easily run via a clearcase
view.  Label each day and have a set of files per day, pick the day you
want.   I think you can likely get something similar with subversion or
cvs or whatever version control system you use with
branches/labels/tags/etc. given some thought.
