There isn't really a 'yum server' so much as a collection of rpms and
repository information that you can host. It can be done through
lighttpd, apache, or just about any other webserver. Have a look at
the createrepo command, as this has what you want. The CentOS wiki has
a good writeup on creating your own custom repositories.
