Thanks Ryan! I'll give it go after some coffee (it's nice day for a walk to the coffee shop, here in NYC it's 60F and sunny - tomorrow of course we get 36F and 10 inches of snow, never trust a Groundhog being the lesson I suppose). I'll try method one first - I thought perhaps the directory structure would require /efi/boot/EFI/boot but thought maybe I was just being dense.
