If you simply want to re-use partitions, use the <partitioning_advanced>
bits.

Here's an example...
    <partitioning_advanced>
            <fstab>
                    <!-- Read data from existing fstab, don't format filesystem on /local -->
                    <use_existing_fstab config:type="boolean">true</use_existing_fstab>
                    <!-- All partitions found in fstab wil be formatted and mounted by default unless we do the following to save them -->
                    <partitions config:type="list">
                            <partition>
                                    <format config:type="boolean">true</format>
                                    <mount>/</mount>
                            </partition>
                            <partition>
                                    <format config:type="boolean">true</format>
                                    <mount>/var</mount>
                            </partition>
                            <partition>
                                    <format config:type="boolean">true</format>
                                    <mount>/boot</mount>
                            </partition> </partitions>
            </fstab>
    </partitioning_advanced>

This one re-uses the existing partition map but does reformat /, /var, and 
/boot but leaves any other partitions (mostly we have a /local path we
want to leave as is) and mounts them.
