If you add the line DOMINO_JAVA_CONSOLE = yes to /etc/sysconfig/domino then the startscript will run server -jc for you (see /opt/dominowrap/serverwrapper). It should not open any windows when the script is run, either at boot or using rcdomino start. You should then be able to use jconsole to connect to it at any point from any machine.
