unusual characters in OOo

Hello everyone, Sorry to ask a maybe too simple question, but does anyone know how to (find the information how to..) assign "fast keys" to special characters that you could select yourself? For example I need letters like i, e, and a with umlauts frequently for writing Dutch. I can just patiently open the "insert" - "special characters" menu and select one, but I can't turn the unicode-code which is also mentioned on the right side, for every character, into a 'fast key' like Ctrl + Shift + F1 or whatever, or just use the coding itself.
