You can use /dev/disk/by-id/volumename of /dev/disk/by-path/volumename which are unique across hosts and are created/destroyed automatically by SLES (and openSUSE). Your SAN should give each LUN a unique id. Make sure it does. In special cases like disaster recovery you might want to put a (replicated)snapshot off the LUN back online which might have the same name as the original.
