One problem there is that there's no "$hostname" variable in fstab or 
lts.conf.
Another solution could be to use LOCAL_APPS_EXTRAMOUNTS 
(http://manpages.ubuntu.com/lts.conf) to mount an extra dir with sshfs, 
and put symlinks to it.

But I think you are overcomplicating things.
You want 'guest sessions with persistent folders'.
Why not use 'normal sessions with autoresetted settings' instead?

LTSP automounts $SERVER/home/username to $CLIENT/home/username.
Just tell them to use their documents folder as usual.
And on login, instead of deleting ALL directories to create "guest 
accounts", delete all EXCEPT the documents folder.
