We use Intel NUCs, NUC5CPYH to be more precise. I am not sure about RAM, 
maybe 2 or 4 GB, I don't remember. They have run without any problem 
here in a GBit network ever since. We bought 2nd hand monitors for them, 
and they needed adapters because the monitors have DVI and the NUCs a DP 
slot only.

For my office, I have a Zotac with an i3 processor and 8 GB RAM, and it 
runs like anything within this network.

Everything with Ubuntu Mate and LTSP and Wine and Crossover etc.
