In general, Ubuntu produces the same installation wherever you install 
it. Except if you select the installation of binary drivers (nvidia 
etc), which we don't recommend anyway.
So while you can try it, I'm not sure it's a big troubleshooting step.

I think the quickest and safest test would be to follow
http://wiki.ltsp.org/wiki/Installation/Ubuntu
on any real PC (even on one of the clients), without ANY customizations.
No guest accounts, nothing.
Make this PC a temporary server.
It shouldn't take more than 1 hour including the CD download.
Then see if the clients work fine that way.
If they do, you can start searching on "which of your customizations 
break it", by adding them one by one.
