Have you tried to use a 'Multiple Item Info' dialog to make the  
change for a set of files?
When one changes the menu entry in such a dialog, the displayed  
finder icons should indicate that it affects exactly the selected  
files, without involving others.

I have disabled the search-index daemons, so I cannot verify this  
with search results, but you might try that for widely strewn source  
files.
My experience with "Change All" is that its additional effects are  
restricted to those files for which no specific application has been  
specified. That is, those which display with a generic file icon.

As a last option, whichever application last writes the file becomes  
bound to it.
