Any system released in the Snow Leopard era can be down graded ( All current iMac, Macbook Pro, Mac Pro system ).

I've personally done this with the current iMac systems.

Any system that was released post Lion ( such as the current 2011 Macbook Air and 2011 Mac Mini ( such as your core i5 ) ), can only run Lion or later, as Snow Leopard never supported them, and thus lacks the device profile to boot the system.
