The only way I know of is to have the desired version installed on the
system. That can be done in a chroot jail, though.

| I don't use dselect, I just use apt, but I'm pretty sure that as long as you
| don't do an dist-upgrade, you can point to testing, and only upgrade the
| pacakges you want (and their dependencies)
