Because then I would have to replicate all e-mail accounts on both servers, the ISP (external) mail server and the internal (on premises) 
mail server. That is double the administrative work.

A single "catch all" address on the ISP mail server has no maintenance, and then I can manage the user accounts only on the internal mail 
server.
