It's all *very* well documented, in a sequence of RFCs that go back into 
the 1970s.

If you don't want to wade through all of them, the O'Reilly sendmail 
book (the "bat" book) is good (I wonder what happened to my copy? :-) ), 
as is the documentation tree in the Postfix source.  (Postfix is the MTA 
for those who worry about security, it was designed from the ground up 
to be secure.)

Ah, I wasn't laughing at you, just the idea that a SPAM filter would get 
it all, it's an old joke, about a confidence man selling the Brooklyn 
Bridge to someone just arrived in New York City from the country.
