A good way is to configure a spam filter, such as SpamAssassin, as a
getmail filter. Set it up so it just adds headers. Then have getmail
send the mail directly to dovecot-lda. Sieve can then file spam into a
spam folder. You probably don't need anything else.

Using getmail filters and delivering to a delivery agent is well
documented.

Once you have that set up you can't look into setting-up training
folders so that you can train whichever filter you use from your email
client.

If you use SpamAssassin I wouldn't recommend the dovecot antispam
plugin, but it's OK for bogofilter.
