It should be possible to build debs directly from the current tarball.  
There are instructions for that, in the INSTALL file.

You'll have to rebuild the entire stack, starting with courier-unicode,  
going up to courier-authlib, and then courier. This is not the official  
Debian packages. They are configured differently, and not compatible with  
Debian's official packages; but this makes it possible to do this for the  
current version of Courier packages.
