That's certainly possible, except that this will be a somewhat of an  
unwelcome surprise for anyone who updates to the new version without being  
aware of this change beforehand.

Of course, things can be done to avoid the hassle. However a question comes  
to mind: what's the driver here. Note that these aren't really "official"  
Debian packages, so the noncompliant paths aren't really an issue of any  
kind.

Note, also: the Courier package does put its configuration files, including  
courier-imap's, in /etc/courier.

The unofficial Debian packages are laid out to be consistent with the Fedora  
packages' layouts, which have older lineage.
