The reason for Postfix's setting is so that it's Postfix that can be adapted  
to mimic other mail servers. Qmail and Courier use "-". Sendmail uses "+". I  
don't recall which one came first, but Qmail used "-" from the beginning and  
Sendmail's behavior was not really baked into the sendmail itself, but, as I  
recall, sendmail's complex configuration file could be rigged to handle mail  
this way, so it wasn't even baked into Sendmail, at least not at first. And,  
as I recall, Postfix was pretty late to the game, so it was set up to mimic  
either one of the two popular conventions for this.

Having said that, it's not really a lot of trouble to make it configurable,  
I'll look into it at the next free moment. Still, Sendmail is outvoted here.  
"-" is the historical standard, not "+". Qmail popularized this first.
