Javier, I can confirm that turning off squat does fix the issue with UID SEARCH returning no results. I followed these instructions https://www.cyrusimap.org/imap/developer/install-xapian.html to active Xapian search and rebuilt my indices and haven't had any issues as well. I'm probaby going to file a bug about this since I'm sure enabling squat search shouldn't break part of RFC 4731. At the very least there should be some documentation stating that squat should be avoided if the users want UID SEARCH to work.
