Well, glad to know about the nesting.

The other is a big deal for me because I teach for a living. I can have 
30-50 students in each of 4-5 classes for a semester and need a way to 
reach each class during the term. Then I never need it again.

So obviously creating individual contacts is out of the question, and even 
the alternative (I think maybe Apple Mail does this) of the mail client 
creating them for me is also bad, because I either get a hugely bloated 
address book or need to go through and delete them individually.

I realize not everyone (and sometimes I think no one!) has these same 
concerns, but it's a biggie for me.

By the way, management of multiple, independent IMAP accounts and 
identities is also crucial for me (since someone asked about Mulberry 
features we depend on). I only have 6 or so, but it would be a pain not to 
have that.
