This might be one of those instances in which the difference between 
<Enter> and <Return> makes a difference. In newer mutt instances the 
same thing was happening to me (or at least I _think_ I remember this 
happening) and I had to add this to my .muttrc:

bind attach <Return> view-mailcap

That fixed the issue.
