Use qmail directly then. qmail-remote does what you want, simply set a
route in /var/qmail/control/smtproutes. "man qmail-remote" will give
you the documentation.

serialmail is made for "store and forward", that means you keep your
outgoing mail stored until you have a connection to the Internet. It
seems that is not what you want, so there is no need for serialmail.
