Two vital bits of information missing. Sample email source and name/version
of used IMAP server.

If you use html_mail plugin, it has some known bugs when charset is not
iso-8859-1. Try reproducing issue with email generated in any other email
client, that can send emails with both text/html and text/plain message
parts and attachments.
