Thanks  to  your  instructions  above  I was able to create a separate
account  for  my  wife, run a backup on her computer to a thumb drive,
and restore that backup from the thumb drive to my computer.

This is exactly how I remember it from years ago. As a test I have
successfully sent a test message from her account to mine and another
from my account to hers which means her unreadable mail password was
copied over correctly.
