its simple in spamassassin, if i know what to scan for and its 
dokumented where data is

but when does amavisd support ARC-Seal, ARC-Sign ? :=)

it mostly on maillist do one more DKIM-Sign :/

rule of thumps, never DKIM-Sign when it already is signed
