https://wiki.qmailtoaster.com has a lot of users and a nice community. You should be able to have a qmail server up and running in just a couple hours. Unfortunately, we haven't ported to debian yet, although I believe there is a person or two who have done this. You'd need to check the email list archives, or ask on the list.
