Yes. This is how it should work out-of-the-box.

In ZOË, setup as many email accounts as you have outgoing SMTP servers. 
Make sure that the effective sender email address (e.g. the 'From:' 
header) match the email address of the account. Based on that 'From:' 
header, ZOË will pick the right outdoing SMTP server when relaying your 
messages.
