So I was thinking of another way as well.  What do you think of this...

I already use about 65 rules to filter my mail into various folders for 
easy grouping and reading.  I thought another rule, evaluated BEFORE 
all the others to redirect all mail that's not Junk to zoe would do 
nicely in conjunction with using zoe as my outgoing SMTP would work 
nicely.

I can't find zoe's email address anywhere in the docs, though.  
http://zoe.omara.ca/ImportViaRedirectedMessages tells me that I can do 
this, but not the email address to which it should be sent.

Also, to make this work effectively, I'll need to find out the rule 
precedence that Apple Mail.app uses regarding whether the Junk filter 
is applied before all other rules or after, as it's not part of the 
normal rule set.  You wouldn't happen to know before I Google for it, 
would you?
