I actually knew about his former last name.  

I don't think it is reflection of education but it may be a matter of 
familiarity.

Incidentally, Wikipedia claims that Jon Stewart's birth name is Jonathan Stuart 
Leibowitz.

I get "Jon" as a contraction of "Jonathan", and of course I get ditching the 
Jewish last name altogether (everyone from Kirk Douglas to Winona Ryder has done 
*that*), but it's interesting that he changed the spelling of his middle name 
when it became his surname.
