  I think you have to go into GLOBAL in order to edit the individual 
drums of a drum kit; and then probably copy the kit to a user drum kit 
location (so you can recall the original when you want to further 
tweak, say, to record the slappy percussion part on it's own, by 
turning off the bass and snare drums.)
that's probably all the hint you need, as you sound experienced in such 
matters. if not, i suggest editing the volume of the drum(s) you want 
to  mute to 0, saving the kit (in Global), recording the part, then 
going to the same edit pages and muting the other ones, bringing the 
volume of the previously muted drum key back up to its original value 
(or higher if you get better signal to noise that way.)
the only problem might be too much effect, when each track has the 
entire chip to itself. But I'm sure you'll have that under control one 
way  or another.
