 If the data sliders are sending data, then it can only be very few things.  A physical fault with the slider?  Exercise the slider, and see if it continues to send messages.  A dodgy slider will usually have a problem in one part of its track, not all parts, and wandering values would be from one part of the track only.  If you can clearly see it is a problem at one part of the track, replace the fader.

If the data wanders in all positions, it might not be the slider that is to blame, and you should suspect power.  The A2D reading depends on the supply voltage and earth being stable.  I would investigate the voltages from the PSU ahead of blaming the slider in that case.

 

 Then you have the loom to investigate.  The design of the loom is such that the weight of te RF bead near the motherboard end can get damaged in transit, as the weight strains the small connecting wires and crashes into the motherboard.  Replace the loom ahead of switching out fader or wheel house PCBs.  If the loom it damaged, you will see wandering values from many parts of the machine intermittently - footswitches fail to hold consistently, wheels detune the machine spontaneously, LEDs won't light.  And as you play, the symptoms will wander as the loom moves in the machine.  They are simple enough to fabricate - some ribbon cable and flat RF filters are easy to come by, you just need Molex crimps, plugs and the right tool.  

 

 The noise on the outputs can also be caused by dodgy looms internal to the machine.  As the machine heats up, the noise goes?  Points to a damaged ribbon cable or plu internally, or some other soldered joint flexing with warm/cold.
