David, "mono" mode in terms of midi has nothing to do with
stereo or mono in terms of audio.

midi encyclopedia:
"mono" means that only 1 note can be played on 1 midi channel
in the same time.
"poly" means that more than 1 note is possible in the same time.
"omni" means that more than 1 channel will be sent or recieved
at once.

For "guitar to midi" you need 6 channels in mono mode for the best results.
It is because midi will bend ALL notes on 1 channel when bitchbend
is activated or played. If you play all 6 strings on only 1 channel and
bend 1 string, all other strings will be bent. This is of course a major
cathastrophe in most situatuions.

hope that makes it clearer, but it is only a small information about
the complex midi protocol.
