I've just done it again to be sure.

* Graphs Management, select the host, delete the disk I/O graphs, select
  the button to delete related data sources too
* Go into "Data Sources" for that host, check they are gone
* Device > Create graphs: create disk I/O graphs (Bytes/sec and
  Transactions/sec)
* Go into "Data Sources": new ones have been created with new IDs
* Go to one of the individual data sources, it shows

    Output Type ID      [Host MIB - Disk I/O - Bytes per second]
    Index Value         55
    Index Type          [hrDiskIOIndex]

But I can manually change this to

    Index Value         md127
    Index Type          [hrDiskIODescr]

and the graph continues to collect data.
