Select another graph type below ?
(there is a select box, i think by default, it is In+Out traffic or whatever selected by default)

To make the greyed out items selectable again you can also do 
Management->Graph Management-> select  Host:   and see the graphs associated with the host;

(or in Devices, select device and click Graph List link, or Data Source List link (so my 0.8.7i has) )
