It DOES boot! (hooray!?)

and it does two requests to the DHCP server - one as
   VENDOR-CLASS: PXEClient
(to fetch gpxelinux.0) and another as
   VENDOR-CLASS: PXEClient:Arch:00000:UNDI:002001

the relevant excerpt from (ISC-)dhcpd is:
