Try selecting one of the s5066 packets and selecting "Decode As..." from 
the "Analyze" menu.  Then select the "Transport" tab, select the 
appropriate port (source or destination), select "STANAG 5066" from the 
"as" list, and click "OK".

Note that this isn't a persistent setting, so you'd have to do it for 
each Ethereal session.
