Outputting recorded traffic at application level

Hi,

I have a requirement to record network traffic and save it to file (for
off-line processing), but I need to save the data at the application
layer - I am not interested in the constituent IP or UDP / TCP packets.
It seems clear that Ethereal can reconstruct messages in this way, even
if it does not actually understand the specific application layer
protocol in question. Is it possible to write these complete application
packets to a dump file?
My specific problem related to a bespoke application protocol for which
no components will exist in Ethereal. Nevertheless, I hope that it would
be possible to save the files at the highest protocol level that
Ethereal does support.

Can anyone help me here? I am a new user of Ethereal so apologies if the
answer appears obvious.
