Create the object, but make it temporary - ie. don't save it, don't add it to 
the protocol-server's buddy list, etc. Then if someone IMs you, it goes in 
something like the "unknown" category and if you wish to keep that person on 
your list, you move them to one of your existing groups (or "ignore" if you 
don't want to hear from them again).

You might want to call it something other than 'uknown' to avoid confusing 
people, or make it optional as to whether it's temporary or not.

Do any of the protocols require someone to be on your buddy list before you 
can IM them? (I don't think so, but I don't know them all). I'm not sure 
that's a problem though, you'd just have to move them to a 'known' category 
before replying.
