I did manage to figure it out. 
I am using HamsterBeta.23.210

In Outlook Express I created a new Mail account 
for admin@localhost
IMAP server: localhost
user: admin   pass:

And in Hamster
Configuration -->Local Server -->Bind to IP
127.0.0.1 for IMAP, Pop3, and Smtp

So now I am able to send email from Outlook Express
from admin@localhost to admin@localhost and it arrives 
in my Hamster /mail folder

but....
what I was hoping for...
was to SET up IMAP folders.

And then, from OUTLOOK Express,
drag and DROP my archived eMail,
into (Hamster) one of admin@localhost's 
IMAP folders.

But Outlook Express keeps giving me a error
message.
