Linux distros for servers that matter

Out of interest, what Linux distributions do people stand by these days for servers that matter? People running commodity hardware under their beds off their ADSL for their eggdrops need not comment. People who recompile their entire OS with compiler flags that someone on a phpBB suggested, also need not comment.
