Linux distros for servers that matter

Out of interest, what Linux distributions do people stand by these
days for servers that matter?

People running commodity hardware under their beds off their ADSL
for their eggdrops need not comment.  People who recompile their
entire OS with compiler flags that someone on a phpBB suggested,
also need not comment.

I am talking about where you have Linux running on a box that is far
away and you don't want to have to go there just because something
you did as part of normal sane administration caused it to die.
